There are two main divisions of lobster tails. There are warm water tails and cold water tails.
The definitive feature of these tails is where they come from regionally. Generally, cold water lobster tails come from The northern East Coast of The United States ( Maine Lobster ) Australia, New Zealand and South Africa. Warm water tails tend to come from Florida, the Caribbean, Cuba and other such suppliers.
